Crispy Smashed Potatoes with Feta

Crispy on the outside, soft on the inside — Smashed Potatoes with Feta is one of those recipes that looks fancy, feels indulgent, and is surprisingly simple to make. Baby potatoes are boiled, smashed, roasted until golden, and finished with salty feta cheese and herbs.

This dish has gone viral for a reason — it’s crunchy, cheesy, and extremely satisfying. I’ve also included a spicy masala-style variation so you can give it a desi twist that Indian readers will absolutely love.

Perfect as:

  • a side dish

  • tea-time snack

  • party appetizer

 Ingredients

For the Smashed Potatoes

  • 500 g baby potatoes (or small regular potatoes)

  • 3 tbsp olive oil (or butter for richer taste)

  • 3–4 garlic cloves, finely chopped

  • Salt to taste

  • Black pepper to taste

For the Topping

  • ½ cup crumbled feta cheese

  • 1 tbsp olive oil or butter

  • Fresh parsley or coriander, finely chopped

  • Chilli flakes (optional)

Optional Spicy Masala Twist (Highly Recommended)

  • ½ tsp red chilli powder

  • ¼ tsp turmeric powder

  • ½ tsp paprika or Kashmiri chilli powder

  • ½ tsp chaat masala

  • ¼ tsp cumin powder

 Step-by-Step Instructions

1. Boil the Potatoes

  1. Wash the baby potatoes well.

  2. Boil them in salted water until fork-tender (not mushy).

  3. Drain and allow them to cool slightly.

2. Smash the Potatoes

  1. Preheat oven to 200°C (400°F).

  2. Line a baking tray with parchment paper.

  3. Place boiled potatoes on the tray.

  4. Gently smash each potato using the back of a glass or spoon.

3. Season & Roast

  1. In a bowl, mix olive oil, garlic, salt, pepper, and masala spices (if using).

  2. Brush or drizzle this mixture generously over the smashed potatoes.

  3. Bake for 25–30 minutes, flipping once, until golden and crisp.

(If cooking on stovetop: roast on a tawa with a little oil until crispy on both sides.)

4. Add Feta & Finish

  1. Remove potatoes from oven.

  2. Sprinkle crumbled feta cheese on top.

  3. Return to oven for 5 minutes, just enough to soften the feta slightly.

  4. Finish with fresh herbs and chilli flakes.

 How to Serve

Serve hot with:

  • garlic yogurt dip

  • sour cream

  • spicy mayo

 Tips for Extra Crispy Potatoes

  • Use baby potatoes for best texture.
