Dates and Walnut Cake

Ingredients

  • 1 cup mejdool dates (or any seedless, chopped)

  • 1/2 cup warm milk

  • 1/2 cup whole wheat flour

  • 1/2 cup all-purpose flour( or you can use ragi powder for healthier version)

  • 1/2 cup walnuts (chopped)

  • 1/2 cup jaggery powder (or coconut sugar)

  • 1/2 cup oil (neutral)

  • 1/2 cup yogurt

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • 1/2 tsp cinnamon powder

  • 1/2 tsp vanilla extract

  • 1/4 cup water (if needed)


Preparation:

  1. Preheat the oven or air fryer to 160°C (320°F). If using a gas stove, grease a pan and line it with parchment paper.

  2. Soak the dates in warm milk for 15 minutes. Then blend to make a smooth paste.

  3. In a mixing bowl, sift the flours, baking soda, baking powder, and cinnamon powder.

  4. In another bowl, whisk jaggery, oil, vanilla extract, and yogurt until smooth.

  5. Add the date paste to the wet ingredients and mix well.

  6. Gradually add in the dry ingredients into the wet mixture.

  7. Add the chopped walnuts and mix gently.

  8. If the batter is too thick, add a little water to adjust consistency.

  9. Pour the batter into a greased baking tin.


Baking Time:
  • Oven: Bake at 160°C (320°F) for 30-35 minutes or until a toothpick inserted comes out clean.

  • Air Fryer: Bake at 150°C (300°F) for 25-30 minutes.

  • Gas Stove: Place the cake tin in a preheated heavy-bottomed pan on low flame, cover, and cook for 35-40 minutes.

  • Ensure the dates are soft for a smooth paste.

  • Do not overmix the batter to keep the cake soft.

  • Add nuts or seeds of choice for extra crunch.

  • Use a toothpick test to check doneness before removing the cake.
