Spicy Miso Carbonara

 If you love creamy pasta but want something with a bold, modern twist, this Spicy Miso Carbonara is about to become your new obsession! It’s been trending across social media because it takes the classic Italian carbonara and upgrades it with deep umami-rich miso and a spicy kick that makes every bite unforgettable. It’s quick, comforting, and has that restaurant-style richness—with ingredients you already have at home. Perfect for weeknights, lazy weekends, or anytime you’re craving something indulgent yet exciting.


Ingredients (serves 2)

  • 200 g spaghetti (or pasta of your choice)

  • 2–3 cloves garlic, finely chopped

  • 1 tbsp white-miso paste

  • 2 tbsp soy sauce (or tamari)

  • 1 tsp red chili flakes (adjust to heat preference)

  • 2 eggs (or 1 egg + 2 egg whites for lighter option)

  • ¼ cup grated cheese — any melting cheese you like (for Indian twist, you could mix with a little paneer)

  • 2–3 tbsp pasta cooking water (reserve water from pasta pot)

  • 1 tbsp olive oil or butter

  • Freshly cracked black pepper

  • Optional: finely chopped spring onion / coriander / herbs for garnish

Instructions

  1. Cook the pasta — Bring a large pot of salted water to boil. Add pasta and cook according to package instructions until al dente. Reserve about ¼ cup of the pasta water, then drain the pasta.

  2. Prepare the sauce base — In a small bowl, whisk the eggs until smooth. Add miso paste, soy sauce, and a pinch of black pepper. Mix well until miso is fully dissolved.

  3. Sauté aromatics — In a pan, heat olive oil (or butter) on medium heat. Add chopped garlic and chili flakes. Sauté just until garlic becomes lightly golden and aromatic — avoid burning.

  4. Combine pasta and sauce — Reduce heat to low. Add the drained pasta into the pan with garlic. Toss well. Remove from heat.

  5. Add egg-miso mixture — Pour the miso-egg-soy mixture over the pasta, stirring quickly so that the residual heat of pasta cooks the egg gently and creates a creamy sauce (without scrambling).

  6. Adjust texture — If the pasta seems too thick or dry, gradually add small amounts of the reserved pasta water until you get a smooth, glossy sauce that clings to the noodles.

  7. Add cheese & finish — Sprinkle the grated cheese (or crumbled paneer) over the pasta. Toss gently so cheese melts and combines. Taste and add more black pepper or chili flakes if desired.

  8. Garnish & serve — Transfer to serving bowls. Finish with freshly cracked pepper, optional chopped herbs or spring onion for freshness. Serve hot.
