Ingredients:
- 2 tbsp chia seeds
- 1/2 cup coconut milk (or almond milk)
- 1/2 cup fresh strawberries (chopped)
- 1 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 2 tbsp Greek yogurt (optional, for extra creaminess)
- Fresh strawberries and nuts for garnish
- Prepare the Chia Base: In a bowl, mix chia seeds, coconut milk, honey, and vanilla extract. Stir well to avoid lumps.
- Let It Rest: Cover and refrigerate for at least 2-3 hours (or overnight) to allow the chia seeds to absorb the liquid and form a pudding-like texture.
- Make the Strawberry Puree: Blend fresh strawberries until smooth. You can add a little honey if you prefer it sweeter.
- Layer the Pudding: In a serving glass, alternate layers of chia pudding and strawberry puree for a beautiful layered effect.
- Garnish & Serve: Top with fresh strawberries, chopped nuts, or a drizzle of honey. Enjoy chilled!
